Pinakbet

Pinkabet is a dish served throughout the Philippines commonly at lunch or dinner. The main ingredient in this dish is ampalaya also known as "bitter melon". The spice named bagoong (pork and shrimp paste) adds a unique flavor.

Ingredients:

1/4 kilo pork with fat
3 tablespoons oil
1 1/2 cup water
2 medium size Ampalaya (Bitter melon)
2 medium size eggplants
6 pieces okra
6 pieces tomatoes
1 small garlic head
2 small onions
1 small ginger
4 tablespoons bagoong (shrimp paste)
Pinch of pepper

Preparation:

Cut pork into small pieces
Cut eggplant, bitter melon & tomatoes into large chunks
Dice onions & mince garlic & slice ginger
Slice each okra into half

In a pan cook pork until lightly crispy.
Sauté garlic, onion, tomatoes, and ginger in the pork fat, slowly mix in the pork.
In a mid size pot, boil water adding the bagoong.
Add in the pork and spices.
Add all the vegetables and cook.
Serve hot.
